pinch of cayenne pepper

24 extra large shrimp, peeled and deveined

2 tbsp minced fresh chives

A Delicious, easy, quick, Authentic Florence recipe for Tomato sauce that is a little different than your regular old spaghetti! You must try this recipe, people will go crazy over it and you can tell them it’s authentic Italian! Your family and kids will enjoy the stringy mozzarella as they dig into it!

TIP: If you have any extra pork meat like from ribs or a roast, brown it in the pot first in a little oil with salt and pepper remove and continue with the recipe. Put the meat back in when simmering, it will give it a richer flavour, its not needed! Make sure you read recipe right through as there are 2 different steps, making the sauce and then making the actual pasta! The ingredients are for both! You can buy in the grocery stores Pork riblets or button bones, these are cheap to buy if you don’t have any extra meat around! Buon appetito!

First you will need…

INGREDIENTS:

3 cans tomato pureed

2 large garlic Cloves

Dried oregano about 2 tsp

Olive oil

1/2 cup of cubed mozzarella cheese

1 package of noodles (I like to use Penne Rigate)

1/3 cup red Italian wine

pinch of salt (if needed)

METHOD

Pasta Sauce

add oil to a pot just to cover the bottom of it and heat. When hot add 2 cloves chopped garlic. Let cook for about 2 minutes. Add a little of the tomato puree. When simmering add wine. When that simmers add the rest of the tomatoes! When that simmers add your dried oregano, sprinkle enough so that when you mix the sauce you can clearly see the oregano throughout! Simmer and let this boil down a bit, up to 1/2 hour.

This is your basic sauce which you can freeze.

Tomato Pasta

In a large pot heat salted water (the salted water should taste like the sea so add enough!) When boiling add your noodles and cook until desired softness. Drain and set aside.

In a large skillet pour olive oil to coat bottom of skillet. When hot add 1 garlic chopped to oil. After 1-2 minutes add your sauce. When simmering add your cooked noodles and mix. When ready to plate add your chopped mozzarella and mix until combined and the mozzarella has just started to melt! Plate and Enjoy!
